For being gluten free and low carb, these are amazingly good! They remind me of 'Shortbread Cookies'--only without the sugar and the gluten!! (This recipe is adapted from Spark Recipes found here.)
Ingredients
1 stick softened butter
2 C. almond flour or almond meal
1/2 C. granulated low carb sweetener (powdered)
1 tsp. vanilla
12 whole almonds (for garnish)
Preheat oven to 300 degrees. Add all ingredients together and mix well. Roll into walnut size balls and place on oil-sprayed cookie sheet (or parchment paper covered cooking sheet.) Bake for 5 min. Remove from oven and press fork in a crisscross pattern on each cookie, then place a whole almond on each. Lower oven temp to 285 deg., then bake another 18-19 min. Remove from oven and allow to cool before removing from pan.
Makes about 12 cookies. Enjoy!!
