Well, for Thanksgiving I needed to take a gluten free dessert to dinner. I knew my sister bought four huge pies at Costco, so one more pie was the last thing I wanted to bring.
Plus, some people are opposed to sugar substitutes, so this dessert needed to be made with regular sugar. HOWEVER, I have made this recipe with sugar subs. and it turned out AWESOME!!!!
Anyway, these Apple Streusel Bars were what I brought to the dinner and guess what? It was the first dessert everyone went for--instead of a piece of pie!!! These bars were quite the hit and I was so glad I decided to make 'em. Just so you know, I ate mine with a scoop of low-carb vanilla ice cream and it was SO GOOD!! (FYI...I doubled it and made it in a 13x9 inch baking dish.)
Ingredients
Crust:
1 1/2 C. almond flour or almond meal
1/4 C. granulated sweetener (low carb or regular)
4 TBLS. butter (salted,
melted)
1 tsp. vanilla extract
Filling:
1 1/2 C. peeled and thinly sliced apples**
2 TBS. granulated sweetener (low carb or regular)
1/2 tsp. coconut flour
1 tsp. cinnamon
1/8 tsp. nutmeg
Topping:
1/2 C. almond flour
1/4 C. walnuts (chopped)
1/4 C. flaked coconut (unsweetened)
1/8 C. oats—GF (or sub. with more flaked coconut)
1/3 C. brown sugar (low carb or regular)
1/4 tsp. cinnamon
3 TBS. butter (salted, soft)
Directions:
1. Preheat oven to 350 degrees F. Spray grease an 8x8 inch square baking dish*. Mix the ingredients for the crust, then press the crust evenly into the bottom of the dish with your fingers. Poke holes in the crust with a fork. Bake for approx. 12-14 minutes (18-20 minutes for doubled recipe) or until very lightly browned on the edges. Allow to cool.
*Note: Metal baking pans brown a little faster, so keep an eye on it if not using glass.
2. While the crust is baking, mix the dry ingredients for the filling, then mix in the apples.
**Note: if you're on a strict low-carb diet, you might use less apples and space them farther apart. Or substitute with peeled, sliced zucchini that's been blotted between paper towels to remove the moisture.
3. Place the sliced apple filling evenly on the crust in a single layer.
4. Mix the dry ingredients together for the topping, then mix in the butter. Crumble the topping evenly over the apple filling.
5. Bake for 15 minutes, then loosely tent with foil and bake for another 15 min. (20 minutes if recipe is doubled.)
6. Remove from the oven and allow to cool before slicing. Makes approx. 9 - 12 apple streusel bars. Enjoy!!
