1 C. almond flour
1/4 C. almond butter
1/4 C. butter (soft, salted)
1/4 C. sour cream (or plain Greek yogurt)
1/4 C. brown sugar substitute (I use Ideal)
1/4 C. white granulated low carb sub. (I used erythritol)
10 drops liquid stevia (vanilla)
1/4 C. whey protein (plain flavor)
1/2 tsp. baking soda
1/2 tsp. xanthum gum
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
1/2 C. walnuts (chopped)
1/3 C. apple (chopped) (Granny Smith is lowest in carb)
Directions:
1. Preheat the oven to 350 degrees.
2. Mix all the ingredients together. I like to mix the sugars and butter first . . . then the rest of the liquid ingredients . . . then the dry . . . fruit and nuts are last.
3. Scoop batter by teaspoonful onto spray-greased cookie sheets (I used two average-sized baking pans.)
4. Bake for approx. 10 minutes or until lightly browned on the edges.
5. Allow to cool on the cookie sheet.
This recipe makes about 20 cookies. Enjoy!
