These Peanut Butter Cookies were about the first gluten free AND low carb cookies I ever made. I've seen similar recipes on 'several' websites, but I adapted this recipe from "food.com" found here. The cookies are very easy to make and taste great!
Ingredients:
1 C. crunchy or creamy peanut butter
1 C. granulated (powdered) sugar substitute
1/4 C. almond flour (makes the batter easier to handle)
1 egg
1 tsp. vanilla
1/4 tsp. baking soda (for a slight rise)
Directions:
Preheat oven to 350F degrees. Mix the ingredients together. Roll the batter into small balls. Place on parchment paper-covered cookie sheet, and make criss cross patterns on each ball with a fork (don't press too hard.) Bake for about 10 minutes. Allow to cool on the cookie pan. Makes 12 - 14 cookies. Enjoy!
