But when I tasted these "Red Velvet" cookies I was like, "Holy moly! These are WAY GOOD!"
These cookies have a rich chocolate and vanilla flavor--a combination that makes them absolutely heavenly and simply to. die. for. :-D
Ingredients:
1/2 C. butter (softened, salted)
1/2 C. brown sugar substitute (I use Ideal)
1/2 C. white sugar substitute (granulated/powdered)
1 large egg (room temp.)
1 TBLS. plain almond milk
10 drops vanilla stevia
1 tsp. vanilla extract
2 tsp. red food coloring (health food stores carry "all natural" food coloring)
1 1/4 C. almond flour
1/4 C. unsweetened cocoa powder
2 TBLS. coconut flour
1/4 C. vanilla whey protein powder
1 tsp. baking soda
1/2 C. semi-sweet, dark, or sugar-free chocolate chips (plus, a few extra for decoration)
Preheat oven to 350F degrees. First, mix together the butter and sugar subs. Then, blend in the egg, almond milk, vanilla stevia, vanilla extract, and red food coloring. In a separate bowl, mix together the almond flour, cocoa powder, coconut flour, protein powder and baking soda--then, slowly mix into the wet ingredients. Mix in the chocolate chips. Roll batter in your hands--about a heaping tablespoonful--and place on a cookie sheet lined with parchment paper. Bake for approx. 10 - 14 minutes. After removing from the oven, poke 2 or 3 chips into each hot cookie. Allow to cool. Makes approx. 24 cookies. Enjoy!!
